The ritual
Step 01
Medium-fine for filter, fine for espresso. The grind is the lever you change before anything else.
Step 02
Twice the weight of water as coffee. Forty-five seconds. Let the gas escape before you pour properly.
Step 03
Slow concentric circles. Keep the bed level. Stop when the scale tells you to, not before.
Come and sit
Twelve seats. A roaster in the corner. We open Tuesday to Sunday — the cafe is built around regulars and the weather.
